Weekend Cocktail- Tom Collins

The misty ambience and the greenery combined with the calm breeze at Forresta is perfect for lingering with a cocktail during pleasant weather.

The Tom Collins is a refreshing gin sour that is an excellent sipper for these days. There are a couple of versions of this drink, the second that uses sour mix in place of lemon and sugar syrup (a choice most often made in bars as a matter of convenience).

Tom Collins


  • 1 1/2 oz gin
  • 1 oz lemon juice
  • 1/2 oz sugar syrup
  • club soda
  • maraschino cherry for garnish
  • lemon slice for garnish


  1. Pour the gin, lemon juice, and sugar syrup in a Collins glass with ice cubes.
  2. Stir thoroughly.
  3. Top with club soda.
  4. Garnish with the cherry and orange slice.


Tom Collins (sour mix version)


  • 2 oz gin
  • sour mix
  • soda water
  • orange slice for garnish
  • maraschino cherry for garnish


  1. Pour the gin into a Collin’s glass filled with ice.
  2. Fill with sour mix.
  3. Shake by placing a tin over the glass, giving a couple of good shakes.
  4. Add a splash of soda water.
  5. Garnish with a cherry and orange slice flag.
